A shot of espresso is around ninety percent water. Everyone in this trade knows it. Almost nobody sells accordingly.
Coffee is dissolved out of the ground bean by the water passing through it, and what that water already carries decides how much comes out and which parts arrive first. Change the water and you change the cup — with the same beans, the same machine, the same hands.
Naples itself runs from 16 to 77 French degrees — the hills to the eastern edge, verified across 49 published laboratory reports. There is no such thing as Neapolitan water. If one city cannot be served by one blend, neither can a continent.

In Naples there is an old habit: you pay for two coffees and drink one. The second stays at the counter, paid for, for whoever comes in and cannot pay. It is called caffè sospeso — a suspended coffee.
It is not charity. Nobody is thanked, and nobody knows who left it. That is the point of it.
Every order placed here leaves one suspended coffee in Naples. We publish the count and we name the bars. If we ever stop publishing it, stop believing us.
